Sheep milk cheese with walnut leaves

It 's a cheese made only from pasteurized sheep's milk by company Cuigusi.
The farm is between Montepulciano and Pienza in Val d'Orcia.
This cheese is available in the months of October and November and it needs, as dictated by the local tradition, a maturing of about four months.
The rounds of cheese are first seasoned for about two months in fir boards and then placed inside the clay jars called "ziri" divided by layers of walnut leaves one from another.
Here they ferment for about 3 months and at the end we get a mature Pecorino cheese with a slightly spicy taste with tannic hint and the distinctive smell of walnut leaves.

It can be shelfed about 180 days if stored in a cool room

The skin is dark with Walnut leaves.
Its interior has a dark paste with soft or semi-hard consistency. It has a tannic perfume and when you taste it you will recognise the scents of nuts.
